Francesina [Boiled beef with onions]

Ingredients

Francesina [Boiled beef with onions] gr 750 leftover boiled beef
3 red onions
extra virgin olive oil
ml 250 beef stock
salt and pepper
gr 400 canned Italian peeled tomatoes

Method

This is a delicious way of using up any leftovers from the previous day's mixed boiled beef. Thinly cut the onions and sauté them in oil in a large heavy-bottomed saucepan over a moderate fire for 2-3 minutes. Add half the stock, cover and cook for about 10 minutes. Meanwhile, chop the meat into small pieces or thin slices. Add the meat to the onions, season with salt and pepper, and stir for 3-4 minutes. Stir in the tomatoes, cover and simmer over a low fire for about 15 minutes, moistening with some more stock if required. Serve hot.
